We loved CurrySimple Gourmet Coconut Soup (tom kha) -- $5.99 at Whole Foods. It comes as a concentrate, in an aseptic pouch with a one-year shelf life. Add it to 12 ounces of water and heat, adding sliced chicken or shrimp and fresh mushrooms, if you like. All the traditional Asian ingredients are things people would want to eat, including lemongrass, coconut milk, kaffir lime leaves and lime juice.
